Grupo Bimbo Pushes White Bread Toward Fiber Source Status by 2030
97% of Grupo Bimbo white breads and baked goods now hit 2 grams of fiber per 100 grams. The baker aims for the 3-gram Codex fiber-source benchmark by 2030.
Grupo Bimbo is closing in on fiber-source status for its white breads and baked goods. Today, 97% carry at least 2 grams of fiber per 100 grams, against a 3-gram goal for 2030.
TLDR
- 97% of white breads, baked goods, bagels and English muffins carry 2-plus grams of fiber per 100 grams.
- By 2030, all white breads and baked goods should reach at least 3 grams per 100 grams.
- 98% of its daily consumption portfolio meets its Positive Nutrition standard. Those products drive 48% of net sales.
- By 2027, its breads, baked goods, English muffins and savory bagels should contain fewer than 15 ingredients.
The Fiber Milestone
The figures come from an Oct. 15 press release timed to World Bread Day. Food Business News covered the update on Oct. 19.
The 3-gram goal matches the Codex Alimentarius standard for a product to be considered a source of fiber. Codex is the international food standards code. The company’s 2023 annual report also set an interim 2025 step of 2 grams, Baking Business reported. The company said it extended its fiber work to white bread in 2023.
How Positive Nutrition Is Measured
Grupo Bimbo classifies products using the Health Star Rating (HSR) system. The method is endorsed by the governments of Australia and New Zealand. It scores foods from 0.5 to 5 stars. Products at 3.5 stars or higher count as optimal nutritional quality.
The company said its gains came from adding fiber, protein, whole grains and vitamins. It also cut sodium, added sugars, and saturated and trans fats. “Since 2005, we have been transforming our recipes,” said Patricia Villalobos, global research and development vice president.
Simpler Labels
Grupo Bimbo makes its packaged breads and savory baked goods without preservatives or artificial colorants (azo dyes). Its flour is fortified with iron, folic acid and B vitamins. The 2027 ingredient goal calls for recipes with fewer than 15 ingredients, “all of them easily recognizable to consumers.”
The Access to Nutrition Initiative (ATNi) ranked Grupo Bimbo the fourth-highest-rated food company globally in its 2024 assessment.
Why It Matters
White bread is a high-volume staple. Moving it toward a fiber-source threshold sets a clear, measurable benchmark for bakery R&D. The challenge is doing it alongside a short-ingredient-list goal. Teams must add fiber without adding label complexity. Fiber and whole grain suppliers should watch how the world’s largest baker closes the last gram.
